Eggplant Shakshuka – Eggs Poached in Brinjal Recipe by KooKingK

 250 g Eggplant
 1 Onion
 1 Tomato
 1 tsp Red chili flakes
 1 tsp Black pepper
 1 1/2 tsp Salt
 1 tsp Cumin Seeds
 4 Eggs
 1 tbsp Garlic
 3 to 4 tbsp Olive oil
 1/2 Cup Parsley

To make Eggplant Shakshuka first, take a pan to add 3 to 4 tablespoon of olive oil. when the oil heat enough, add garlic and stir it then add onion and cook until it turns into golden then put the chopped tomatoes and cook for 2 to 3 minutes. Now, put the red chili flakes, pepper, salt and cumin. Mix it up well and cook until the oil oozes out then add eggplant and mix it well with spices. Cover with the lid and cook until it becomes tender.

After that, crack all the eggs on cooked eggplant and simmer for 5 minutes then garnish with parsley.

Delicious Eggplant Shakshuka is ready to serve.
