Coconut Cookies - Bakery Style Recipe by KooKingK

 1 1/2 cup Plain flour
 2 Eggs
 1 Cup Coconut
 1/2 Cup Butter
 1/2 Cup Sugar
 1 tsp Baking powder
 1/4 tsp Salt

To make coconut cookies first pre heat the oven at 160 °C for half an hour.

In a medium bowl, cream the butter and sugar until smooth. Beat in the egg one by one then add vanilla extract and beat until light and fluffy. Add coconut with salt and baking powder and mix it up with spoon. Gradually add flour and mix it well.

Drop the dough by ice cream scoop onto greased cookie sheet. Cookies should be about 3 inches in apart.

Bake for 10 to 15 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

Coconut Cookies are ready. Serve it with tea or cofee.
